History of asian noodles
The oldest written record originates in a book from the HAN dynasty era (206 BC – 220 AD). They are manufactured from wheat paste and become the main aliment in China.
Later during the dynasty Song governance (960 – 1279 AD) they became very popular in cities and noodle shops were staying open whole night. In 2002, archeologists found an earthen jar containing 4000 years old noodles which were very well preserved.
Chinese noodles are a traditional birthday dish in China. Their length symbolizes longevity. Special attention is paid that they stay long and whole and wouldn’t tear during their production. Torn noodles indicate illnesses.
Ways of preparing noodles
Noodles can be prepared in two ways before frying:
1. Put noodles to boiling water and cook for 15 minutes.
2. Strain cooked noodles, let them drain and fry.
1. Put noodles to water around 60 – 70 degrees Celsius.
2. Leave noodles in water for 2 hours.
3. Strain noodles, let them drain and fry.
